Our Story
We are the Collenbergs! Together we raise an army of children, run several businesses, farm/ranch full time, and care for far too many animals! David is a fourth generation farmer/rancher with extensive background and knowledge in caretaking the land and animals. He was raised on his family’s dairy in Humboldt County, CA where he began working the cattle and driving the tractors on his own around 8 years old. He has 4 children of his own and is the glue that holds the family together. David spends every single day working whether it is from home or on the road. Sam is the first generation of her family to make a career out of farming/ranching, however she grew up surrounded by animals. She comes from a line of medical field employees and blue-collar pros. She never imagined her life would be spent this way, but here she is, and she can’t imagine it any other way! Sam and David share an infant son together, making a total of 5 children, but they always seem to end up with many other kids hanging around, often feeling like they have more. Sam is often found working alongside David, both on the road and at home. It is not uncommon to see her tending to animals, kids, the home, and whatever else needs tending to.
Our cattle started out as somewhat of a hobby. Sam had to have the “designer” cows and David reluctantly agreed… or should we say got over it! Eventually two turned to three and so on and so forth until we had an entire herd. With that, David decided that he was going to plant some fields in Triticale for cover crops, in between alfalfa crops. Then came the great idea of harvesting his own grain and milling it into his own feed. Together we decided that we had to experiment with our own beef and see if we could come up with something great. The store-bought beef just wasn’t cutting it anymore, and the idea of lab grown meat was scaring us more and more, we did NOT want to feed our children that! The time to see the finished product finally came after months of finishing and dry-aging and just as we had hoped, every single cut and bite we took was INCREDIBLE! We decided there was no turning back, everyone deserved the opportunity to eat such incredible beef, and the rest was history!
We ship on Mondays & Tuesdays of each week to ensure your beef arrives in a timely manner and still frozen. Pick up is also available at our ranch in Siskiyou County, or at our feed store in Humboldt County. We are confident you will enjoy every bite of our fabulous dry-aged beef!
